Holiday Cucumber
Cups- These peeled cucumber cups, with their holiday color scheme, look
wonderfully festive, plus they're a snap to make. All you will need is 6 medium
cucumbers, 1 (8-ounce) container of red pepper hummus, 1 (8-ounce) container of
lemon hummus, and chopped chives for garnish. Start by making creative stripes
on the sides of the cucumbers with a vegetable peeler. Cut the cucumbers
crosswise into 3/4-inch-thick rounds. Using a teaspoon or melon baller, scoop
out the seeds to form a well, about 1/3 inch deep, in each slice. Then, spoon
about 1/2 tablespoon of the red pepper hummus into the wells of half of the
cucumber cups. Repeat the process with the lemon hummus. Lastly, sprinkle on
the chopped chives as desired.
Fruit Gobbler-
Here is what you will need: Bosc pear (head), Melon (body), Cheese
(beak and tail feathers), Red pepper (snood, feet and side feathers), Raisins
(eyes), Grapes (tail feathers), Bamboo skewers, Toothpicks. Start by stabilizing
the melon body by cutting a shallow slice off the rind to form a flat base.
Using a section of bamboo skewer, attach a Bosc pear head to the melon. Next, cut
a cheese triangle beak and red pepper snood. Attach both, along with raisin
eyes, to the head with sections of toothpick. Lastly, cut red pepper feet and
set them in place. For tail feathers, skewer cheese cubes and red grapes, then
insert the skewers as shown. Pin pepper side feathers in place with toothpicks.
Sweet Potato Chips-
Once you start, you can't stop munching on these crispy chips. All you will
need is 2 medium sweet potatoes, 2 tablespoons olive oil, salt and pepper, and
paprika. Start by preheating the oven to 350 degrees. Peel the sweet potatoes
and slice as thinly as possible. Next, toss with olive oil and spread in a thin
layer on a cookie sheet. Sprinkle with salt, pepper, and paprika to taste.
Lastly, just throw these tasty treats in the oven for 20 minutes or until
crispy!
